Ham or Bacon Egg Cups
Today for breakfast I choose to make some bacon egg cups following the recipe I found on pinterest (http://pinterest.com/pin/281123201711651307/). I made a few changes here and there. This is my version.
What you will need
- 8 Eggs
- Bacon or Ham or both
- 1/2 cup of shredded cheese
- 1 pinch of Salt
- 1/4 teaspoon of black pepper
- Non stick spray or vegtable oil
- Muffin Tin
- Oven
Start off with preheating the oven to 350 degrees and make sure you have the oven rack in the middle. While the oven is preheating spray or grease the muffin tin then take the bacon and place the bacon around the sides. I had some ham in my fridge so I used some of that too. Below is a picture of what it should look like.
Now in a bowl mix the 1 pinch of Salt, 8 Eggs, and 1/4 teaspoon of black pepper. You can just mix it using a whisk.
What I did next was pour the mixture into each of the bacon or ham cup. Once that what was done I used the 1/2 cup of shredded cheese and put it in each cup make sure you only fill them about 3/4 full or even a little bit less as they will expand. Below is a picture of what it should look like before you place it in the oven.
Place them in the oven for 30 to 35 minuets.
Remove them from the oven and the muffin tin and they should come out looking like this.
I personally found that a using a jumbo muffin tin worked best. But all in all these are a great and simple breakfast. Apparently they are low in calories too.
